In search of the recipe for the perfect pancakes: artificial intelligence, flour, milk and eggs
Make some American pancakes, also called pancakes, is quite easy and even cheap. In half an hour and with relatively easy ingredients to find, you can get up to 16 pancakes. However, as always happens in the world of gastronomy, there are different recipes, times and processes, so the question is what is the perfect recipe?
The ideal would be to see what all pancake recipes have in common, analyze their comments to see which one is more effective and, using all this data, obtain an optimal recipe, the recipe, in capital letters and bold. Well this is just what has been proposed Monolith, the artificial intelligence company that grew out of Imperial College London.
Artificial intelligence to make pancakes
For a model of machine learning to function, data is needed, be it images, videos, texts or, in this case, recipes and comments. Monolith AI detected about 800 different recipes for American pancakes, but needed those that had enough positive and negative ratings to train the model so that it was able to detect the ideal amount of each ingredient. Thus, out of 800 recipes, they were left with 31.
To keep things simple, the model focused on the following key ingredients: flour, baking powder, milk, eggs, butter, salt and sugar. Seeing that some recipes recommended a resting time for the dough, they added that variable to the data set as well.
After analyzing the information collected (and discovering along the way which were the most or least important ingredients), Monolith asked his model to produce three recipes. One of them is the following one. According to Monolith, with this recipe we will get some fluffy pancakes:
- Flour: 210 grams
- Sugar: 48 grams
- Yeast powder: 14 grams
- Salt: 6 grams
- Eggs: 2 eggs
- Milk: 256 grams
- Butter: 25 grams
Unfortunately, the model was not trained to produce the cooking process, but more or less standard instructions can be followed. Basically, you have to mix the dry ingredients (flour, sugar, baking powder and salt), beat the eggs and add the milk and melted butter and, from there, follow the steps that are proposed in Directo al Paladar, for example.
